Two years ago i got
married and of course as some other things I`ve made these biscuits too. The
base is just a basic butter cookie dough(I got it from my mother in law). For
filling you can use any kind of jam, but i wanted something different. After a
bit of surfing in internet and looking coupe different recipes i came up with
this filling. It`s very simple and very fresh. The cookies are soft and taste
so... good.
Biscuits with lemon filling
about 45 pcs
Dough:
400 g butter
3 dl sugar
2 eggs
9 dl all purpose
flour
2 tsp baking
powder
3 vanilla sugar
Filling:
200 g vanilla
creamcheese
½ jar ( about
150-170 g) lemon curd
1 tbsp icing
sugar
Beat the softened
butter and sugar until stiff. Add the eggs. Mix the dry ingredients together
and add them to the butter dough. Knеаd
until everything combine together in a smooth dough. Let the dough cool
in the fridge for about an hour or so. Roll out the dough into a thin sheet
(approx.4 mm). Cut the cookies with a biscuits cutter ( diameter about 6 cm)
and place the cookies in a baking dish over a baking paper. Bake at 200 degrees
for 5-10 minutes. Let them cool. For the filling mix together the cream cheese
, sugar and lemon curd. Pipe the filling on the cookies and press second cookie
on the top.
